Chefs Miko Aspiras and Kristine Lotilla, the dynamic duo behind the innovative Scout's Honor (for more on Scout's Honor, see my earlier post, Choose Your Cookie, Choose Your Milk for Your Very Own Scout's Honor Craft Cookie Milkshake) and Le Petit Souffle (more on Le Petit Souffle on my previous post, French Cuisine with an Asian Spin at Le Petit Souffle), introduces their latest dessert experiment, Freezer Burn. It's the hottest new spot at Bonifacio High Street and here's why...


With the success of their numerous dining concepts, both Miko and Kristine continue to innovate, pushing the envelope with new ways to enjoy and experience desserts. And now, the creative tandem have set their sights on ice cream, taking the comforting and familiar and boldly reinventing it. And just how far can you go with ice cream? Leave it to Miko and Kristine to take you there with their cool ice cream-based "composed desserts," and hold on for an amazing ride. Take the Morning Glory (P 295), with Freezer Burn's Maple Bacon Ice Cream served with soft and dense Brioche Toast and Caramel Popcorn topped with Cotton Candy for a playful and indulgent touch.


The Maple Bacon Ice Cream combines the deep and sweet notes of maple with the smoky hint of bacon in a balanced blend that just works perfectly. Take a bite of the ice cream, and finish it off with a chunk of soft brioche, caramel popcorn, and cotton candy. And it just can't get better than that.


But Miko and Kristine have even more surprises up their sleeves. Drawing inspiration from ketchup and fries, Freezer Burn's unconventional Ketchup Mayo Fries (P 295) takes ice cream to the next level, with the unique Ketchup and Mayo Ice Cream paired with crisp Salt Pepper Fries. The mildly tart hints of ketchup are tempered by the richness of the mayo, combining for a new and distinct ice cream experience.


And it gets better with the crisp Salt Pepper Fries. The flavors of the Ketchup and Mayo Ice Cream are kicked up a notch by the salty fries, enhancing and bringing out the flavors even more. Dip the fries in the Ketchup and Mayo Ice Cream, and repeat. I have to admit, this one totally surprised me. But then again, chefs Miko and Kristine always do, and just like the first composed dessert, this was another clean plate. Freezer Burn's other Composed Desserts include Ola!, pairing Dark Chocolate Ice Cream with Churros, the Thick Mints with Mint Stracciatella Ice Cream and fudgy Brownies, the Junkie with Cookies and Junk Food Ice Cream served with Nutella Donuts and Caramel Sauce, the G'Day Mate with Butter ice Cream and Sticky Date Pudding, and the BBPPBB with Browned Butter Pecan Ice Cream and Peanut Butter Liege Waffle and Banana.


Or, you could go for one of Freezer Burn's newest Composed Desserts, The Good Shepherd (P 295), inspired by the iconic purple yam jam brand with Baguio Ube White Straciatella and warm Cheese Muffins. The newest composed dessert highlights traditional local flavors, reinterpreted in the fresh and novel style of chefs Miko and Kristine.


The sharpness of the Cheese Muffins, topped with grated cheese, contrasts with the subtle sweetness of the Baguio Ube White Stracciatella Ice Cream without overpowering it. If you love the tradional ube and queso combo, this one works pretty well too. And the cotton candy completes this creative composed dessert by Freezer Burn. Other new composed desserts include What's Up Coconut with Burnt Coconut Husk Ice Cream paired with Calamansi Curd Ensaymada and the Goin' Bananas with Banana Leaf & Tonka Bean Ice Cream served with Banana Tart Turon.
