Mixing It Up at Sangkap

From Batanes, Ilocos, and Pampanga up north, to Batangas, Bicol, Bacolod, Iloilo, and Zamboanga down south, Sangkap celebrates the diverse and rich regional flavors with a culinary palette of comforting local flavors.

Located at the new Portico development in Pasig, Sangkap offers a wide range of local regional dishes created by Chef Raymar Reyes (R), drawing inspiration from the richness and diversity of local cuisine. Begin your culinary journey with the distinct flavors of Batanes with Sankap's refreshing Ivatan Kilawin (P 290), a regional variation of the local ceviche with fresh fish marinated in vinegar with coconut milk, grated coconut, and fiery chili. The creamy coconut milk adds a richness to the dish, pairing well with the fish and the chili. The flavors are fresh and clean, simple and uncomplicated, with the grated coconut adding both texture and a subtle sweetness to the dish.


One of the must-try dishes at Sangkap is their unique Pate na Adobong Manok at Toast (P 210), a creative take on the classic chicken liver pate. Chef Raymar Reyes infuses the familiar flavors of chicken adobo, with its deep notes lingering long after the first bite. Add some caramelized onions for its contrasting sharpness to round out the flavors. The soy, vinegar and garlic hints of the adobo adds depth to the nutty notes of the chicken liver pate for a whole new flavor experience.


For the mains, why not try something different, like Sangkap's Cebu Lechon Sinigang (P 350-Regular good for 1-2 persons/P 520-Pamilya good for 3-4 persons). Sangkap's inventive siningang includes crispy pork belly in a thick and tart broth soured with tamarind and mangoes. It's this blend of tamarinds and sour green mangoes that give the thick broth an intense and flavorful kick to temper the richness of the pork for balanced flavors. The fresh vegetables add more layers of flavor to complete the dish.


Pair your mains with the Sangkap Fried Rice (P 270), soft and fluffy rice cooked with smoked salted fish adding its distinct notes to complete your feast.


For dessert, expect the same playfully inventive approach to flavors with their range of homemade ice cream flavors. The Bicol Express Ice Cream (P 90/scoop) may sound like a stretch, but it works. Seriously. The subtle notes of the coconut cream coat your palate, followed by a whisper of heat from the chili that just gradually builds up with every spoonful. Rich, creamy, and spicy, it's not your usual ice cream. And yes, I'll have another scoop...


And who knew the traditional flat, sweet rice cake can be transformed into another innovative ice cream flavor? Just leave it to Chef Raymar Reyes. The Palitaw Ice Cream (P 90/scoop) has a grainy texture from the rice, contrasting with the velvety smooth ice cream, and one scoop immediately reminds you of the traditional palitaw. Sangkap offers two other unique ice cream flavors, the Champorado and Calamansi, so why not try all four and have some fun.


Or you can go for more traditional local desserts, like the Tri-Color Spring Roll na may Vanilla (P 220) inspired by the local turon with ube and langka filling served with ice cream. Familiar flavors yet refreshingly different, savor local regional dishes from north to south right here at Sangkap.
