Australia's favorite all-day breakfast and dessert bar is finally here with its signature airless ice cream...

Aptly named "Gelare," which means "to freeze' or congeal" in Italian, it represents the final step in the ice cream making process. Founded in Australia back in 1986 by Farid Torabi, Gelare remains the much-loved dessert bar throughout Perth and Brisbane with over fifty branches across Australia, Singapore, Hong Kong, Malaysia, Indonesia and now the Philippines. From its famous ice cream to waffles, pancakes, hot beverages, coffee, smoothies, milk shakes and all-day breakfast, Gelare brings the best of Australia to Bonifacio Global City with its first branch at Uptown BGC. At the heart of Gelare's success is their signature ice cream. Unlike the usual commercial ice cream which contains 50% air or some gelato brands with 25%, Gelare is totally airless giving it a denser, creamier, and noticeably chewier texture. After the inaugural ribbon-cutting ceremony, guests eagerly lined up for Gelare's signature airless ice cream. Gelare offers sampling spoons so you can try the different flavors before deciding, but it's never that easy. With so many flavors to choose from, take your time before committing to a scoop. But that's just part of the fun...


Blueberry Cheesecake, Chocolate Chip Cookie Dough, Peanut Butter Cup, Pralines & Cream, Vanilla Bean, Oregon Mint Fudge and Rum Raisin, take your pick. My favorites? Jamaican Chocolate, Honey Malt Crunch, and the Caramel Fudge Brownie. But there's more. Much more at Gelare.

Gelare offers 24 staple ice cream flavors to choose from, including Vegan and Halal ice cream like Banana Caramel Swirl, Lychee Lane Sorbet, Mango Passion Sorbet, Lemon Lime Sorbet and Matcha Green Tea. And try not to lick the chiller, you're just a few seconds away from an all-natural airless ice cream treat.


Once you've selected your flavor, go for a Single Scoop (P 120 one flavor) or a Double Scoop (P 199 two flavors). You can also customize your ice cream and have it served in a freshly made Waffle Cone or as a Hot Fudge Sundae (P 169) with a single scoop draped in hot fudge and topped with fresh cream, nuts and a cherry; Nutella Treat (P 169) with a single scoop, Nutella syrup, fresh cream and nuts; or the Banana Split (P 370) with three scoops of ice cream, fresh banana, hot fudge, strawberry sauce, fresh cream, nuts and a cherry. Or take home some ice cream indulgence with a take-out Pint (P 499). Gelare also offers a wide variety of add-ons, from different sauces, fresh fruits and nuts for that perfect customized scoop. There's just no limit to your imagination at Gelare.


At the formal opening, guests sampled some of Gelare's tasty dishes, a preview of even more good things to come.


I go for a single scoop of Jamaican Chocolate and Caramel Fudge Brownie, and one bite immediately tells you that air does make a difference. Totally airless, Gelare's all-natural ice cream feels heavier and packed with real and bold flavors. The full-bodied and dense texture sits on your palate, slowly releasing its fresh flavors. The variety of nuts in the Jamaican Chocolate pair well with the deep notes of the chocolate ice cream, and the chunks of moist fudge brownies swirled in rich caramel make the Caramel Fudge Brownie just one of my many personal favorites at Gelare. Two scoops down, it's time for a comforting Affogato...


Gelare's Affogato is pure indulgence in a glass combining the robust notes of premium Italian espresso with a scoop of decadent ice cream. Following an insider tip, have your Affogato topped with the Gelare's Honey Malt Crunch. The distinct notes of honey, caramel and espresso come together in a perfectly seamless blend without overpowering the other for a refreshing and satisfying caffeine fix.


And if you're hungry, no worries, Gelare has that covered too. Crispy on the outside, light and fluffy inside, Gelare's signature waffles form the base of their savory dishes. Other All-Day Breakfast dishes include the Eggs Ben (P 279), Frittata (P 229) with ham, mushroom, cheese, and onion; and Gelare's Big Brekkie (P 399) with whole waffle, scrambled eggs, bacon, sausage patties, hashbrown and Gelare waffle syrup.


Craving for something sweet? The Nutella Banana (P 245), the classic waffle with bananas and drizzled with Nutella, should do the trick.


Or pick your ice cream and go for the A la Mode Treat (P 285) with their classic waffle and your choice of single scoop ice cream topped with whipped cream. The thick waffles works so well with the ice cream, soft and firm with an airy crispness retaining its form all the way to the last bite. Other tempting waffle combinations include the Super Treat (P 350) with a double scoop of ice cream, the Mud Pie (P 245) with Oreos and chocolate syrup, Blueberries & Cream (P 285), Peaches & Cream (P 285), and Strawberries & Cream (P 285).


Gelare is a welcome addition to the metro's growing culinary landscape, offering locals a taste of the world's best. For those living in the south, a branch in Nuvali is in the pipeline.
